Daniel was born and bred in Prestatyn. His family loved cooking, especially his father and his grandmother, and they were a great influence on him.
He had his first experience as a chef in a local hotel whilst he was studying for his GCSE in Catering. After doing his A Levels he took a year out to work as a Sous Chef in a hotel before graduating in Theatre, Music and Media Studies in Trinity University College, Carmarthen.
During his time in University he was chosen to take part in the cookery series ‘Casa Dudley’. He had the opportunity to travel to Spain and work with many experienced chefs including, Bryn Williams, Dudley Newbery and Llinos Woods.
After graduating he worked in a local hotel before moving on to the Queen’s Head in Glanwydden, near Llandudno, where he was a key member of the team that won the coveted prize of AA Pub of the Year.
In November, 2009 he moved to the Castell to his first job as Head Chef. Dan is eager to create an interesting and exciting menu so that the Castell will be the best place to eat, drink and socialize in Caernarfon.
In his spare time Dan enjoys fishing, playing the drums and spending time with his young daughter, Alaw.
